I used an App to calculate where the exact opposite side of the world from me is. Turn's out, it's in the Pacific Ocean. So I picked Thailand, because it's far. I haven't been out for Thai food in a long time, actually! We had a great spot at the corner of our street in NYC, and one day we learned that fish sauce was very heavily involved in all of the vegetarian entreés! Our Thai food dreams were crushed. Isn't that the worst?? When you find out something you have been eating and loving for years that you always thought was vegan, actually isn't?! It's the worst. 


Anyway-- on a blustery winter's day, the kind of day I grew to love and crave while living in NYC, nothing "hits the spot" quite like a spicy Thai curry. That spicy warmth that you feel in your throat even an hour after you've left the restaurant, the piping hot, rich coconut broth with chewy bits of tofu and soft veggies, and perfect, fluffy white rice as the backdrop... It's making me want to break out my winter gear. I have the best gear, you guys. My favorite curry recipe is the Flying Massaman Curry from Vegan Eats World, one of my all-time favorite cookbooks. Of course I love all the curries, be it red, green, yellow or spicy jungle curry. All are welcome on a cold, February afternoon. *Winter is coming!* I'm pretty pumped for it <333

  1. Urgh, that fish sauce is the bane of the vegan world I think! Homemade Thai food is definitely the way to go.

  3. I love that Flying Massaman Curry! I was trying to explain it to my mother and PB curry was the only way to explain it.
